Have a friend with a 2000 Z71 with 16 inch stock rims, but he has 285/75 R 16 tires on his., said it was the biggest tire the rim would allow and has had no problems with rubbing or scraping.

Hard to say... I switched from a Bridgestone H/T to an A/T and now I get a very slight rub in a hard corner on the outside of the wheel well. Same size tire. Wheel-well clearance would be a big factor.
