Restaurant.

We stopped at the front desk of the Solomons Hilton this afternoon and asked what was being built at the corner of Dowell Rd and H.B. Trueman Rd. (sorta' in the Hilton Parking lot).

The lady at the desk said that it was going to be a restaurant called
the Ruddy Duck or something like that.

Does anyone have any details ?

Did you notice though it said "Register before January 1st. 2008 and get a free pint of beer at opening". What I found funny about the mailing list is they ask for your name, but then under the drop down box for Gender they have Male, Female and the other option is "Prefer not to Say". I know some names can be male or female, but for common names I think they can figure it out.

The information is most likely feeding into a database or sumpin.

The updated web site now says register before 7-1-2008.

Hi everybody!!!

I'm Carlos with Ruddy Duck Brewery & Grill.

I saw your postings in this forum and wanted to jump in to say hi.

Yes we are a Brewery but also a Restaurant.

Just wanted you to know that RDB&G is not a chain. It’s 100% local Southern Maryland!!!!
We will try, as much as possible, to use our local produce, meats and sea food.

We will bring to Southern Maryland not only hand Crafted beers and a full service bar, but a unique menu including Gourmet pizzas, pastas, local seafood, and grilled stakes and meats; at a very reasonal price.

For those that prefer wine we will have an extensive list of international wines.

Unfortunately we are not open yet. We are looking at end of August now. The addition of the brewery makes it quite complicated since special permits, tough local regulations and brewing beer itself take time.

We are going to make a big effort to improve service and waiting time in this area.

We will also have live entertainment, brewery tours, a beer mug club, beer festivals, special dinners (paring food and beers) and lots more.

In the next couple of weeks our new website will be up and running. You can still go to our current web site and register for a free beer.
Over 600 people have registered already!!!
I’m looking forward to giving a lot of beer away, so we can celebrate our grand opening together!!!

Sorry for the mistakes and inconveniences. I agree, and told the web site designer, that when you register we shouldn’t be asking for gender!!!

Anyway just ask any questions or if you have some ideas of what you would like to see at Ruddy Duck, let me know.

Are you going to have a fire burning pizza oven? I think somd could really use a good pizza place. Nothing says good pizza like a perfectly blistered thin crust.

:lmao: Even if it's not fire, a good pizza oven is a must, not those "put it in on the wire rack on one end and it pops out the other end 10 feet away". Just not the same. Gotta be baked on stone.

That looks like the one they have at one of my favorite neighborhood pizza places in Alexandria. Good pizza from that thing. Now, for toppings, you need some quality ingredients. Anyway, good news on the oven! Thanks.

I've been interviewing some excellent brewers with Gold and Silver medals from the BABF
and a couple of them fell in love with the area... So if they don't make an excellent beer I will.

The food, I know, will be great. I grew up in a mediterrenean environment and I have devoted my life to the science and good eating...

Hi!!!

We will have a customer appreciation program. So if you come often you would get prices like t-shirts or free meals. All the people that have registered online will get a VIP or Ruddy card that will add point every time you visit us.
We will have a list of the people that have applied for free beer. When you come to visit us just show your ID and we'll pour a super fresh hand crafted beer for you!!!

I'm looking forward to trying your "FireBrand" cocktail sauce.

We had a slow start but we are moving faster now. Miles of conduit and sewer lines, data conduits, beer lines under the slab.

As far as drink recipies:

The Shikitini- a martini so dirty mothers pick up their children and cross the street when they see it coming.

1.5 oz Top shelf Vodka
1 cap full extra dry vermouth
1.5 oz of olive juice

shake with fresh ice
strain and pour into chilled martini glass. Garnish with as many anchovy stuffed olives as can fit into the glass :drool:

As far as drink recipies:

Things are coming along very well. I'm setting up the brewery and buying HOPS since they are very difficult to find lately, and very expensive. They used to cost $5 per pound now $30 to $35 /lb...
Last week we received our pizza oven, it's absolutely great!!! We will by far have the best pizzas in town.
Please tell your friends about the "Duck". We have extended, until September 1st our free beer promotion. We have almost 1000 people registered on line and I would like to see another 1000 or more.

Sounds Great! Personally, I'm a traditionalist. I like my chips plain and fresh, lightly salted with a dip on the side. I know that sweet potato chips/fries are very popular. I'm sure whatever you guys come up with will be enjoyed.

Personally, I'd love to see a good spinach dip. Can't find it anywhere down here. And of course, bring on those pizzas!

If you make a good pizza, your place will always be packed because there are no other good pizza places in somd. Those of us from NY really miss a nice brick oven pizza, thin crust of course. I think you'd get those transplants from NJ & Philly, too. :yay:

We will have a wheat syle all year round but we will rotate to offer different styles: German Heffe, American wheat, blueberry or rasperry wheat.

We will try to open with a Marzen lager to celebrate Octoberfest unless we open later.

Same thing with Stouts and Porters will will rotate to create a vanilla stout, coffe porter, outmeal stout, maple sirup stout.

I shared it with him and a few guests of the Hilton Garden Inn and it was amazing!!! The guys staying at the hotel wanted to buy more... Tim promised me to share the formulation and process conditions. It's going to be good!!!

Plus now you don't have to spend money in gas going to DC!!! and you'll be able to have your own growler/s.

I'm partially to hoppier beers (and don't drink fruit flavored beers, which I find too sweet). Any beers that will quench my thirst? I love IPAs. One of my current favorites is Bell's Two Hearted.

It's been very difficult to get Hops these days. I would have loved to have some fresh hops, may be next year... I got 200lbs of pretty good pellet British hops that are in the freezer right now, waiting for our first brews...
I'm anxious too.

Sounds Great! Love the leaf Goldings! I think they came from Kent in the UK.
Wild Goose used to use them in a hop percolator which was like a Huge coffee pot.....I cant describe the incredible aroma in there when the Goose was steeping......then it was pumped to the open fermenting tank, Good Times!

You may need to make a trip to Dogfish Head. One of the top micro breweries in the country and some great woodgrilled pizza.

From what I understand things are still moving forward on the RD. As for the Hilton I am pretty sure they are not going anywhere. The owner has several other properties as well. The Hilton Garden has only been opened for a year now and although occupancy rates are down right now I am sure things will turn around after the holidays.

We have worked on several restaurant projects and it seems that are chains or the ones going in shopping centers go fast. But every one that we have worked on the is a one off and is standalone seems to take forever.

By the way, so you know straight from the source, the Hilton Garden Inn is doing very well. The parking lot looks empty during the day but it is also big, we allowed all the extra space for the restaurant.

By the way, so you know straight from the source, the Hilton Garden Inn is doing very well. The parking lot looks empty during the day but it is also big, we allowed all the extra space for the restaurant.

The pizzas are going to be New York/Italian style, but we are also thinking of doing some thick crust ones and foccacias.

Today I took a tour of the Hilton Garden Inn for an event we are planning and was told that the latest opening will be "around Easter" . The restaurant and hotel are linked in the business sense and there will be room delivery from the restaurant to the hotel for guests who request .

The hotel sales manager is named Paula. She's new to this hotel and she's really fantastic.
Paula is anticipating a great business with the hotel and restaurant.

If you're trying to secure a block of rooms for a family event, you will be pleased with her and the special offers she has.

Great picture!!!

The more you are anxious the more we get anxious.

We are almost there but we still have to go through a lot of inspections and equipment testing. Opening a brewery is not easy and we want to make it just right.

The place is looking wonderfull and the people that showed up to our Job Fair are fantastic. We had almost 600 applicants.

Please be patient, once we open we will be around for a long time.

There were over 600 applicants. The lead chef conducting the interviews said so, and many of the application forms had numbers on them, at least on the second day of the job fair. I was number 441.

If I recall correctly he said they had about 300 the first day, so the total is probably more on the 700 side.

I stopped by the Hilton Garden Inn to make a reservation on the first day of the job fair. The hotel had people directing the applicants and there were people lined up and people coming in groups to apply. The parking lot was full of cars.


Jennifer at the hotel stated the RD would be open around May 25. I think they are striving for a Memorial Day Grand Opening.

We are going through a lot right now, but if we can get everything straight by Friday we are starting to brew on Saturday. YES!!! at last
We will start with traditional English pale ale, with English and German grains and a great British yeast strain. Then we'll brew a Kolsch style or golden ale, clear crisp very refreshing light gold ale with a lot of character. Third batch will be Belgium style wheat, imported yeast and the best wheat beer Jonathan, the brewer, has ever made. From there "You name it" we can make any style of beer you want.
The food... Wait to taste Jay's and Marlin's creations and for Sunday brunch an authentic Southern cuisine with grits, eggs, shrimp, bacon stuffed jalapenos, breads, and lots more.

I don't think all of the delays are because of them. I was told that some of the delays are because of the county. No one has ever opened up a brewery in Calvert County, yet alone somd, so they were not sure on codes, regulations, etc. I did hear that this week they are doing private servings of food for practice and training purposes.

Hubby & I can't wait to check out this new place. Gotta love a good brew house and NY style pizza. The menu looks great, lots of choices.

The grand opening (Wed) is our 2 year anniversary. I wonder if it's too short of notice to get the inlaws or my Mom down here to watch the baby? Hmmmmm. :buddies: We'll be checking it out in the near future, no doubt.

Lunch would be great. The website doesn't show the hours they are open except for the Grand Opening at that shows 4pm.
