RED BEANS AND RICE

6 c. water
1 lb. sm. red beans or red kidney beans
4 tbsp. butter
1 c. finely chopped scallions, including 3 inches of tops
1/2 c. finely chopped onion
1 tsp. finely chopped garlic
1 ham hock or leftover ham bone with trimmings and fat
1/2 lb. salt pork, cubed
1 tsp. salt
1/2 tsp. ground black pepper
1 tsp. cayenne pepper
6 to 8 c. freshly-cooking long-grain rice

1. In a heavy 3 to 4 quart saucepan, bring water to a boil over high heat. Drop in beans and boil briskly, uncovered, for 2 minutes. Turn off heat; let beans soak for 1 hour. Drain beans in a sieve set over large bowl; save soaking liquid and add enough water to make 4 cups. Set beans and liquid aside.

2. Melt the butter in a heavy 4 to 5 quart casserole set over moderate heat. When the foam begins to subside, add HALF of the scallions, the onions and the garlic, and, stirring frequently, cook for about 5 minutes, or until they are soft and translucent but not brown.

3. Stir in beans and liquid, ham bone, salt pork, salt and peppers. Bring to a boil over high heat, reduce heat to low and simmer partially covered for about 3 hours, or until beans are very soft. Check pot from time to time and, if beans seem dry, add up to 1 cup more water, a few tablespoons at a time. During last 30 minutes or so of cooking, stir frequently and mash the softest beans against the sides of the pan to form a thick sauce for remaining beans.

I know Jameo wants you to make bean soup...but I really like ham and potato soup

1 ham bone with some meat
1 onion, diced
1 can peeled and diced tomatoes with juice
1 can kidney beans
3 potatoes, cubed
1 green bell pepper, seeded and cubed (optional)
4 cups chicken broth
chopped carrots and celery are optional
salt and pepper to tast


DIRECTIONS
Place the ham bone, onion, tomatoes, kidney beans, potatoes, and green pepper into a 3 quart or larger slow cooker. Add chopped carrots and celery if you wish. Pour the chicken broth into the slow cooker.
Cover and cook for 5 to 6 hours.

I'll also top it with shredded cheddar cheese before serving. :yum:

Ham Pot Pie Soup

Ingredients
1 lb boneless ham
5 medium potatoes, quartered
1/4 cup onion, finely chopped
2 cups flour
2 eggs
1/3 cup water


Directions
1. Put ham in about 8 cups of water. Bring to a boil, turn down and simmer gently for 4 hours.
2. Remove ham, chunk it up, then return back into the broth.
3. Add onions and potatoes.
4. While that is simmering , mix your flour , eggs and water to make a dough. Roll out to approximately 1/4" thick on a floured surface.
5. Cut into 2" squares (I use a pizza cutter).
6. Add these to the pot and simmer an additional 45-60 minutes or until dough squares are done!

This is true. I am from Georgia which I might add is a cultural hotbed compared to say some of the more backward states like sayyyyyyyy Nebraska, but I was forced by the government to spend 13 years in Maine.
