You mentioned having a bumper crop of eggplant this year... saw this link and thought of you!

Eggplant Carpaccio

Peel eggplant, slice it very thin and purge with salt. Arrange on a plate and drizzle with olive oil and lemon juice vinaigrette, then sprinkle capers and shaved Parmesan over the top. Salt and pepper to taste.

I did this with zucchini last week and it got gobbled right up - no reason why eggplant wouldn't work as well.

My girlfriend was telling me about how she did this with zucchini and then made it into crabcakes (just like you normally would minus the crab) and nobody knew there wasn't any crab and said they were the best they ever had!! I have got to try it..

Ingredients
1/4 cup dry breadcrumbs
1/4 cup (1 ounce) grated fresh Parmesan cheese
1/4 teaspoon seasoned salt
1/4 teaspoon garlic powder
1/8 teaspoon freshly ground black pepper
2 tablespoons fat-free milk
2 1/2 cups (1/4-inch-thick) slices zucchini (about 2 small)
Cooking spray
Preparation
Preheat oven to 425°.
Combine first 5 ingredients in a medium bowl, stirring with a whisk. Place milk in a shallow bowl. Dip zucchini slices in milk, and dredge in breadcrumb mixture. Place coated slices on an ovenproof wire rack coated with cooking spray; place rack on a baking sheet. Bake at 425° for 30 minutes or until browned and crisp. Serve immediately.

Okay, stealing that one right now!

Zucchini is like fruit to me - I like it when I have it at someone else's house, but if I buy it for home I won't eat it. Which is my psychotic weirdness: the aversion to foods that I actually like. Anyway, I'm trying to force myself past this so people don't think I'm nutty and this will be a good recipe to practice on. :yay:

I just cleaned up the garden last night of the spent summer squash and zucchini plants, as well as of the spaghetti squash. We're getting ready to plan out our fall/winter garden. :yay:

But out of the five regular eggplant and the five Japanese eggplants that I have, I will be LOADED with the fruit within the next two/three days. And when I say loaded, I mean LOADED.

ppel it, bread it, and deep fry it. It's sooo good. I even got my anti any veggie that's not green beans SO to eat it this way. takes on a really good flavor..zucchini too. I know it sort of cancels out the healthy aspect though:killingme but makes a really good hors d'oeuvre for a party, with different dipping sauces.

I chunk it up toss it w/ evoo red onion red bell pepper then roast it at 425 throw it in a food processor w/ some garlic salt and pepper mm mm mm! serve it w/ bagel chips or pita chips. It is always a big hit at parties too :yay:

Good thing is they taste pretty good with nearly everything..I liked:

marinara sauce
chipotle sauce (mayo based with chipotle sauce)

How long do you leave it in the oven?

Til it looks done :lol: I dont know maybe 25 minutes or so. You dont completely process it in the food processor either just kinda pulse it until its chunky yet spreadable.


You can also slice egg plant, zuchini, squash, red onion and saute them in a pan til a little browned add some garlic and chunks of tomato, salt pepper then put in a buttered casserole dish. Then pulse fresh parmesean cheese w/ a slice or two of bread. Put on top of veggies bake til golden mmm mmm good.

Yeah I always tell the kids when we cook your nose is the best tool. When you smell it check it :lol:

We had a pretty good turn out in our garden this year so I have been trying to come up w/ recipes I can use w/ the zuchs, squash, and cucumbers since they are producing so many. I was actually surprised how good that sauted concoction turned out. The kids ate it all up w/ out even picking stuff out like they normally do :lmao:

We lost all of our squash plants to the tiny squash bugs.. I replanted on 1 Jul about 3 or 4 more NEW plants and they seem to be doing ok. That and we JUST planted Cantaloupe so that will be a late crop this year.

Now we have to figure out what we are going to do for a fall crop.

What do they make Tequila out of??

We had one orange crush watermelon but Jack Jack went out to the garden and was so excited about it he picked it to come show me :banghead: :lol:

4 medium zuchini
2 large yellow onions
2 green peppers
Garlic to taste
Shredded Cheddar cheese- 2 cups
2 12 oz cans of tomato sauce
1 small can tomato paste
1 lb of smoked Sausage (Kielbasa works well, so does italian sausage but smoked is my favorite)

Peel Zuchini and cut into 1/4" thick coins. Saute in olive oil (with garlic) until soft
Cut the onions and peppers into bite size pcs, Saute them in a seperate skillet until soft (again more garlic to taste)

Drain off most of the olive oil and combine in the larger skillet. Add the tomato sauce and tomato paste. Let the sauce warm up then put about 3/4 of the cheddar cheese in the mix and let it all melt together
Cut the sausage into bite size pcs and heat for two minutes in a microwave.
Add the sausage to the mix.
Put everything into a casserole dish, sprinkle the remaining cheese on top and heat at 350 for about a half hour.

Serve topped with parmesan cheese and with garlic bread.

It goes well with pasta if you like

yeah that one only calls for 2 cloves. I will probably add at least 4 or 5.


I think I am going to make that and my favorite fattening spread this weekend. saute 4 large onions in butter til they are dark caramel brown then throw those bad boys in a food processor that has cream cheese, mayo, sour cream, lots of cayenne pepper & salt whiiiirrrrlllllll! mmmmmm so damn good! :drool:

BG brought me some that she'd made and it was ridiculously good. I also sliced up the eggplant she brought me, breaded it, and froze it for the future. YUM!!

I made some following the recipe I posted and it was fantastic!!

I saw this recipe yesterday on Food Tv for a Tuscan Lasagna. Made w/ grilled eggplant, grilled zuchini & squash. OMG it looked really freakin good. I am going to try it :yay: A new and exciting way to use stuff from our garden and hopefully I can sneak veggies into my kids who love lasagna!
