View Full Version : Tater Tot Casserole
It's what's for dinner! :yahoo:
2 lbs. extra lean ground beef
1 can cream of mushroom soup
1 cup grated cheddar cheese
1 pkg. (2lb) Frozen tater tots
Pat ground beef in bottom of greased 13x9x2 in. casserole dish. Spread soup over meat and cover with grated cheese. Top with tater tots. Cover dish with aluminum foil. Bake at 350° approx. 45 minutes, uncover and bake another 15 minutes until Tater Tots are browned.
You can cut this in half: 1lb. extra lean gr. beef, use ½ or ¾ can of soup. I always use more cheese than this calls for. Layer the tater tots on top until it’s covered.

Really? I always cook mine first, then add the soup mix. Then I dump in a baking dish, layer the tater tots on top and let them brown, then add my cheese and let melt. This sounds good, it has been awhile since I have had it.

Really. No need to brown the meat unless you have a problem with packing down raw meat. :jet:
If you are using high fat burger it would make sense to brown and drain first.

BG posted the recipe on here somewhere - it's pretty much outstanding and definitely makes a difference. The wild mushrooms give it an earthy flavor, but you could tone that down with white or portabella shrooms.

Well, I tried making it last night. I guess 85% fat free isn't good enough because when I took it out after the first bake there was a smallish square of beef patty floating in a little pool of grease. I took the grease out and chopped up the patty and added the taters. Not bad. Think I'll add flavor next time like chopped onoin maybe, sauteed first, and maybe real mushrooms or some bell peppers. Other than that it was OK. Also might think about some pre-browned sausage rather than beef.

You *definitely need to use the 93% lean beef! The key to the "sauce" is how the cheddar cheese melts into the COM soup and makes a creamy deliciousness under that layer of crisp tater tots that is hard to mess with.

I was gonna ask which meat/fat ratio ground beef it was. Thought it would be good with a leaner ground beef, but then, fat is what brings good flavor. Might have try this one. :yum:

Kinda like redneck sheperds pie. I cooked the beef first and drained the fat...I have to admit it was pretty good for such a simple meal.
See, the whole thing about spreading the raw ground beef in the bottom of the casserole is that it creates the base for the sauce (COM soup & cheddar cheese) & Tater Tots. The sauce seeps into the beef, but also the bottom of the Tots, which makes the whole thing work together. It's supposed to be simple.
Of course, not everyone will like the combination of the ingredients in this particular recipe - but it is not the same if you brown the ground beef first and spread it at the bottom of the casserole.

Tater Tot Taco Bake
Ingredients:
1 lb ground beef
1 small onion (diced)
1 garlic clove (minced)
1 small can black olives (sliced)
1 (1 ounce) package taco seasoning mix
1 (16 ounce) bag frozen corn
1 (4 ounce) can green chilies (diced and drained)
1 (12 ounce) can black beans (drained and rinsed)
1 (16 ounce) bag shredded Mexican cheese blend
1 (16 ounce) package frozen tater tots
1 (10.5 ounce fluid ounce) can enchilada sauce
Preheat the oven to 375 degrees. Spray a 9×13 inch baking dish with cooking spray. Heat a skillet to medium high heat. Add ground beef, garlic, and onion and cook while breaking the meat apart with a spoon or spatula until the ground beef is completely browned. Drain off any excess fat. Add taco seasoning mix, green chilies, frozen corn, and black beans to the ground beef. Cook until heated through.
In a large bowl combine ground beef mixture, ¾ of the Mexican cheese blend, and all of the tater tots. Stir well to combine.
Pour about 1/3 of the enchilada sauce into the bottom of the prepared baking dish. Add the tater tot mixture to the baking dish and lightly pat the mixture down into a solid, even layer. Pour the remaining enchilada sauce over the tater tots.
Place into the oven and bake at 375 degrees for 40 minutes. During the last few minutes of baking, top the casserole with the remaining Mexican cheese blend and the sliced black olives. Return to the oven and bake until the cheese is melted and bubbly.

Is that the same one that was made famous by the 17 (is it 18 now?) and counting lady?
It's 19! :faint:
The Taco Tot casserole turned out ok. If I make it again, I'll cut down on the corn. I love corn but it kind of took over. And of course it didn't get crunchy because its all mixed in instead of on top.
I'll try the original one posted next time.

I'm going to try the original mixed with taco seasoning mixed into the ground beef. I have no problem with this. It's like mixing a meatloaf.
