1 broiler-fryer chicken, cut in parts
1 tsp. EV Olive oil
1/2 tsp. rosemary
1/2 tsp. paprika
1/4 tsp. salt
1/8 tsp. ground pepper

Place chicken, skin side up, in baking dish. Brush oil over chicken. In small dish, mix together rosemary, paprika, salt and pepper. Sprinkle mixture over chicken. Preheat oven to 425. Bake, uncovered, basting frequently with pan juices, 50 minutes, or until chicken is fork tender. Makes 4 servings.

mmmm chicken with rosemary. :)

What did you serve for sides?


If you're lazy like me, you might want to follow Ina Garten's perfect chicken breast recipe - it calls for chicken breasts at 350 for about 45 minutes. No basting. And I have to admit, they are perfectly done.

To intensify the flavors X10, use fresh rosemary and place the rosemary/garlic mixture under the skin before cooking it. :yay:
