Anybody make them? I made some about a week ago. I'm frugal and I re-used the pickle juice I'd been saving from the pickle jars. Anyone have any good recipes?

Here is a receipe that is my Mom's that I have used for years.
One large jar/container with lid
Use two cans of beets with juice
½ or ¾ cup of white vinegar with more beet juice
Taste test, if required use more vinegar/ needs a tang to it
Shell hard boiled eggs (I usually use a dozen)
Add eggs to the beets/beet juice/vinegar.
Put lid on jar or container, refrigerate for about 4 or 5 days
so the eggs will soak up the juice and vinegar.
Eggs should have a real colorful purple look to them.
You can reuse the beets/juice over, you may have to add a little
more juice and vinegar. I have reused it over about three times
before I notice that it has lost its zing.
Easy to make and excellent for Easter Dinner or anytime really

Hey, that's MY mom's recipe! I never liked them but they sure were pretty.

Pickled eggs are NOTHING. Years ago, I gave my ex the book "I Love To Fart Cookbook" - BIG mistake. Nothing but NOTHING can match the noxious fumes produced from their recipe for Curried Cauliflower. :jameo: :geek: :dead:

I've bought that gardineria (sp?) stuff in the market. Pickled cauliflower, carrots, peppers and such. Curried? Eww. Dutch would probably like them but no way!

I think Baja pickeled some one time....PM him...First gallon was gone in no time. I still have half a gallon from the 2nd batch. How long do they keep? :evil:

I pickeled some a while back too but they just didn't turn out right....They were nice and purple but when I went to eat them, they made a big mess when I cracked them open.....I like my eggs cooked better.....

Thanks everybody...I made some last night before I read the tread responses. I just used vinegar, salt and dill weed. I'm going to try the next batch with the recipe above.

According to your friendly USDA food inspector Home pickled eggs should be used within one week.

This doesn't sound like enough time to even get the eggs properly "pickled", but that's the official government position.
