View Full Version : cooking lunch for 26 people

I am cooking lunch for 26 but rounded it out to 30 because we always have a few stragglers roaming around. It is an office luncheon that one group does every other week.
My menu consists of:
Pork Won Ton soup
Lumpia
Veggie Fried Rice
Chicken Fried Rice
Steamed Rice
Terriyaki Beef Skewers
Fortune cookies

I need help with portion control.
I am going with 3 won tons per 8 oz of soup per person
2 Lumpia per person ( I make them like egg role size)
2 beef skewers per person
the fried rice I think most will want the chicken but we do have a couple veggie peeps and some on diets that want just white rice and not fried.

Don't forget about the peeps with peanut and wheat allergies, and the vegans. Oh, and the Paleo dieters who won't eat grain in any form. The pork may offend the Muslims and sympathizers, and the beef will piss off the global warming crowd. And the Asian theme may offend Vietnam and WWII vets.

Other than that, it sounds great. Pack up leftovers that food weirdness people won't touch and send them to my house. :yum:

depends on what rice you using, If you are using long grain, jamine or basmati rice they double up when you cook also factors such as if the rice as a side dish or main dish as a side dish 1/4 cup uncooked rice and as a main 1/2 cup uncooked. Good luck.

I had management on m,y team make up the fortunes for the fortunes cookies.. and wanted to put one in there that said MEOW... but thought it might offend someone.. :killingme

What day and time should I straggle in and is a leftover box available? I wouldn't want anything the picky people left behind to go to waste. :)
