The curiosity was killing me..
I took the lid off of the Science Experiment we're calling "Sauerkraut" last night..
IT'S WORKING!! Kind of percolating, bubbling up, and starting to get a sour smell..
Picles are doing something but not sure what. The Tannin from the HorseRadish leaf is turning the brine into a tea color, but it looks like it's working too...
What else can I ferment?? Maybe I should plant some cherry trees and make some chrerry wine..

A friend of mine would make wine out of peaches, grapes, blackberry, blueberry, locust blossoms, honeysuckles, etc. :otter:

Peppers, pearl onions, radishes, rice and soybeans (miso)

Look for the book "Wild Fermentation" by Sandor Ellix Katz. I bought it to help me gather more ideas, it is VERY helpful and not written too dryly.
If you are making Sauerkraut, make Kimchi next!

My grandma made that back in the day. Sadly to far back ...so I was never old enough to taste it. :( They all say it was really good.
