Southern States has a good selection. Target DOES carry them but it's a hunt-for-it sort of thing. (at least they carried them last year) Walmart has them and so does Food Lion and some other grocery stores. Around Father's Day, Food Lion had them on sale.

I was in Target just a few weeks ago looking for them. They told me they don't carry canning products. Maybe it was just a sales associate with his head up his arse, which is always a real possibility.

:yeahthat:

Walmart selection is ok if you can get them early enough (they sell quickly during the canning season). But to find the canning supplies locally year round do what Vrai said and hit up a True Value for the best finds also Lowe's has started improving their selection.

Another place to look is Craigslist or on the Classified here or yard sales and estate sales are good places to find jars for cheap. Just make sure that the rims are NOT damaged as the lid will not seal properly.

Wal*Mart has the best prices and selection and then they also have canning salt, pickeling spice, cheesecloth and just about anything else you need. I hate going to Wal*Mart, but for one stop shopping on canning supplies, it's your best bet.

Been canning for a while...and looking for jars for a while... And Walmart had all the different sizes, two brands (although I mostly get Ball) and all kinds of spices and ad ons...ie. pickle crisp and salsa mix. Yes, a pretty good selection. Leonardtown True Value always has the best selection, but I didnt want to drive up there.

I think it's hit and miss, like many things. They only get x amount in for a season and once they are gone...

This year I purchased a super duper slap your momma dehydrater and I'm really tempted to never can anything ever again. Actually, I haven't canned nor frozen anything from the garden yet this year. I've dehydrated everything from spring strawberries to the cucumbers I was going to pickle. :lmao: I think I'm going to harvest all my mint, basil etc and dehydrate them too.

Yup, I'd have to say that you are exactly right about the limited supplies of items for different seasons.

Wow! Which dehydrator did you get I have a big stainless steel one from LEM. You dehydrated the cukes? What did you do with them (seasoning), and uses for them afterwards?

I couldn't decide between the LEM and L'Equip (very similiar) and finally hit a sale and went with the L'Equip 12 trays, auto shut off, programmable thermostat etc. I love it. I love setting it and walking away and having no worries about getting up in the middle of the night.

Anywho, first batch of cukes I salted and drained and then dehydrated. They taste better than Veggie chips that are sold in the stores. I could snack on them all day. Next batch, I just sliced (no seasoning) and dehydrated. Same kind of cukes, but they taste a bit sweet without the salt. You can always rehydrate them or add them into recipes, like cucumber dip, cucumber soups as is. I'm thinking my next batch I'll put some kind of season salt on them - and make them spicy hot and eat them like chips too.

Why do they call it canning?

Crewdawg141
07-10-2012, 04:18 PM
Why do they call it canning?

"Why is it called “canning” if you are putting food in jars?

In 1795 Napoleon offered money to anyone who could find a way to preserve foods for his troops. Nicholas Appert of France found a way to preserve food in jars sterilized and sealed with pitch, and had a vacuum-packing plant by 1804. This process was a military "secret," but by 1810, Peter Durand of England had a patent for tin-plated iron to use in "canning." Canned rations were on the field at the Battle of Waterloo.

In 1812, a small plant in New York produced hermetically sealed oysters, meats, fruits and vegetables in cans. Durand introduced his can top America in 1818. Henry Evans patented a machine that made the tin cans, increasing production from 5-6 cans to 50-60 cans per hour.

In 1858, American John Mason invented the now famous glass jar for home canning. By the 1860's, the process time had dropped from six hours to 30 minutes, making canned foods commonplace. In the heating process, the sterilization destroys bacteria and enzymes that can cause spoiling, and the seal prevents new air or other organisms from entering."

I scored some jars today - at Food Lion. I plan to pick up some more - so all the inputs are appreciated. Food Lion only had 3 cases of the quart narrow mouth jars.

I have a small garden this year and hope to put away some pickles. Plus, I just purchased a Excalibur dehydrator and want to put away some apple and banana chips, and maybe some peaches. You can dehydrate fruit and vegs and then put them in a jar with an oxygen absorber and its good for storage. :dye:

Thanks again for all the inputs here.

Make sure to peel the skin off prior to slicing. The skin gets very bitter once dehydrated.

I do love them. Surprisingly so. So do my dogs, but I do not recommend sharing more than one chip with your dog. Learn from my mistake. :lmao:

Oh man. :lmao: One pup loved them so much that I would give him another just to see his reaction. He was adorable. Dehydrated cukes aren't that big, so I wasn't really processing how much I was giving. He had the "runs" for about 2 days. The other pup only had one and had no problems. BTW, he still goes bonkers for those cuke chips, but he can't have but one. Restricted treat.

That's good to know. My Lab will eat fresh cukes with me, but my Rott mix is like WTH are you giving me? I also learned lessons about giving them too much watermelon rind and corn cobs. They like them but too much of a good thing can be bad like your pup and the cuke chips.
