I'd like to live 1-3 weeks with an Amish family in St. Mary's country over late December and January for a research project about the refusal of technology.

It's not all that secretive a lifestyle. I have plenty of friends who are or who were in the church. Perhaps you could go to the farmers market in Hughesville and talk to some of the folks down there.
