We are making lumpia and so far 1 out of 3 we've plopped into the oil, the meat has exploded out of one end. And by exploding I mean shot out of the end of the lumpia out of the pan and across the kitchen like a missle(the meat keeping its tube like shape the whole time). This has never happened to me all the times I've made lumpia. I haven't changed anything to the recipe except we've ground the pork fresh this time ourselves.
Any ideas why its doing this? (One even exploded after being removed from the oil while it was cooling on the plate).

and make sure you are aiming it at a paper plate target when it explodes

I just want to thank you for the laugh.
hopefully nobody was inflicted with a hot beef wound. I hear they are really painfull
of course, I could tell you that your oil is too hot.
try preheating the lumpia in the oven or microwave for a few seconds first, it wont explode that way.

Too moist? Too much liquid in the meat mix? It would create steam which would blow it out the end of the tube when the hot oil hits it.

hopefully nobody was inflicted with a hot beef wound. I hear they are really painfull
the one that pretty much knocked over my utensil holder on the counter looked like it coulda been pretty painful. The explosions were pretty loud too. :lol:

I've changed my mind anyways. I think I want to adopt a japanese baby now, that way I'll never have to buy new electronics again - he'll just make them for me.

This is why they're traditionally made out of dog.
Instead of exploding, they just run around the pan

OK, the real reason is you have left some air in the lumpia. Make sure to roll it tightly to squeeze out any air pockets, and make sure you seal the wrapper well with an egg wash.
