It's easy.......about 4lbs of tomatos, core them and then boil them. Most recipes say for 5 minutes but I usually boil them for about 10 or until the skins start to fall off. Drain them and then leave them under cool running water in the colander. When you can pick them up, take the skins off each one and put them in a blender. I put a large clove of garlic in the blender too. You’re supposed to cook the garlic in olive oil first, but I've done this and it really doesn’t seem to matter. Once you blend it, pour it back into the pan (add salt etc to taste). I add 1 tsp basil, 3tsp salt, 1tsp pepper and 2 bay leaves that you take out before storing or serving. Then let it sit on low until it's the consistency you like it. It sounds like it takes a while but other than it sitting on the stove, it takes me about 20 minutes.

| I've made it with all kinds. The only difference I've noticed is in the color depending on the mater.
