| sushi fish This is a dumb question..but where do you buy good sushi fish around here? I want to make my own, and also I had the seared rare ahi tuna at outback and nearly died of pure LOVE..that #### was so good I almost couldn't stand it. I snarfed the whole t..hing down in minutes. Now im obsessed with making it for myself (ys I realize its expensive ass fish) but I need to know where to find it..would frozen be as good? Or would I have to get it fresh? I want the ahi and some salmon..

Sushi isn't exactly fresh, it's aged and frozen and just buying a raw fish and cutting it up just won't do. There really is a lot more to being a sushi chef then being good with a knife. Seared is a different animal and not really sushi or sushi grade. Alton Brown has great direction on how to, the key being exceptionally high heat.
