| In Response To The Pickled Tomatoes Tred I use the pickle brine from Kosher pickles; spears or whole; makes no difference after the pickles are gone, really. I just peel and slice white onions into rings; sometimes leaving the slices whole; let 'em sit in the fridge for a couple days, then Mmm, Mmm.....

| You can also add.... Canned Sliced Beets along with the onions. Double Mmm

| Meh.....I'm not much of a beet eater. Now, cucumumumberz :snort:, they would be good with the onions.

| Thinly sliced onions and cucumbers, pickled, are great on a burger. Adds a bit of tangy crunch. And it is sooo easy to make. Peel cucumbers, run a fork along the edges to add some texture. Peel and thinly slice white onions. Take equal parts vinegar / water (or to taste) (I like more vinegar). Add salt to taste, toss in cukes and onions and let soak for a few hours.
