They don't look that appetizing, but food doesn't translate well on camera and it often tastes better than it looks.

Mmmmm that sound amazing!

You should try Rachael Ray's caesar stuffed eggs...omg they're so good! Caesar Stuffed Eggs Recipe : Rachael Ray : Recipes : Food Network
  • 12 large hard-boiled eggs, peeled
  • 1 small clove garlic
  • 2 teaspoons anchovy paste
  • A handful grated Parmigiano-Reggiano
  • 3 to 4 tablespoons mayonnaise, just enough to bind
  • 1 teaspoon Worcestershire sauce
  • Juice of 1/2 lemon
  • 1 teaspoon coarse black pepper
  • 2 romaine lettuce leaves, from the heart, finely chopped
Cut the fat rounded ends off the eggs and scoop the yolks into a bowl. Stand the hard-boiled egg whites upright in the egg carton. If you prefer to serve the eggs on a platter, trim a small piece of egg off the pointed ends so they will stand upright.

Break the egg yolks up a little bit using a fork. Grate the garlic directly over the bowl, then add the anchovy paste, Parmigiano, mayo, Worcestershire, lemon juice, pepper and half the finely chopped lettuce. Mash until smooth and check the seasonings.

Fill the egg whites, overstuffing them a little. Garnish with the remaining finely chopped lettuce.

I like this idea, even for regular stuffed eggs. A bit different than the traditional cut-in-half presentation.

I actually tried this a few days ago. Not easy. The yolk isn't always at the same end, so when you cut the top off, the yolk might not be exposed. Then you have to dig it out and that's not easy either, ripped the egg white in the process.

The few I managed to get right looked nice.

I've been tempted to buy that individual dip Wholly Guacamole for snacks, but I worry about how long the shelf life is. I won't eat the same thing every single day. So I worry it's a waste of money. Anybody know how long it lasts?

A waste of money if you want to snack. I would buy the container and devour it in a sitting.

Oh bummer...I just cut the eggs in half when I made them, like I normally would. Either way, they tasted awesome. You really should try the caesar stuffed eggs
