Stuffed Veal Breast

Best stuffed veal breast ever. Salvatore's in OC. The breast was stuffed with proscuitto and provolone. The sauce was mushrooms and peppercorns in a lemon/wine sauce. Heaven on a plate that I could never duplicate.

He went out of business.

He did butterfly the breast, stuffed it, and rolled it in breading (probably eggs and flour) browned both sides and then baked it and finished it with the sauce on the stove.

A work of art.

The veal should be tender and not overcooked.

stuffed veal update

Wasnt great. Took it out when meat thermometer reached 160. It was not as lean as I thought it would be. Rather chewy actually. Stuffing was good, but I dont think I'll try it again, not premade anyway. On a happier note, the wine was excellent and after enough of it, didnt care that the veal was disappointing. LOL
