That's almost the same as my recipe, except I use butter instead of olive oil, and a white wine to deglaze the pot before adding the beef stock. I sometimes use consume instead of broth. And provolone for the cheese.

Just made bean & ham soup. Yummy!! I received a spiral sliced ham from work for Christmas. Cut the the ham from the bone leaving some ham on the bone, soak beans 24 hours in water. Pour beans and some of the water used for soaking in crockpot, add cut carrots and finely chopped onions, can of diced tomatoes, a/c vinegar, a little hot sauce and ketchup, add in the ham bone and let it cook for approximately 6 hours on low or until the ham falls from the bone easily. We like ours a little thick so I dont add alot of water.

32oz chicken stock
2 - 12oz cans kidney beans
2 - tblspn hot sauce
1 - boil in bag rice
1 - 12oz spicy italian sausage
1 - 12oz can carrots
1 - onion chopped
1 - 12oz can diced tomato
salt/pepper to taste

Cook sausage separately and cut into your preferred size
Mix all other ingredients in soup pot over medium heat. Add sausage.
Cook a lil longer then enjoy. Add more rice if preferred.

Turkey soup

It's been a family tradition to make Turkey soup with leftover turkey from Thanksgiving and or Christmas. I never could get it right............until this year. Here ya go !!

2 large cans of crushed tomatoes
2 cans of sweet peas
2 cans of lima beans
2 cans of diced potatoes
2 cans of sweet corn
2 cans of sliced carrots
All of your leftover turkey, diced up
1 can of chicken broth
1 lg vidalia onion- sauted until translucent
couple of celery stalks- sauted until done
salt and pepper to taste

The key to any good soup is to slow cook it for 2-3 hrs. I used all canned veggies becuse I made it during the week, after work and didn't have time to use fresh or frozen.

Withrespect: This is an excellent soup! Everyone I've made it for loves it - (except Thing2, I forgot - *he* doesn't like it.)

It's a very forgiving recipe - you can easily double it, etc. Serve it with a nice salad and some crusty ciabiatta bread. (or whatever your favorite crusty bread is!)

THIS recipe is actually Vraiblonde's and is in a thread someplace with other soup recipes...but my sister used to make it, also. So I now call it my Vrai/Sister Sausage Lentil soup recipe.

It is insanely delicious, and very hearty. Thing1, & Thing2 love it.


Sausage Lentil Soup

1 lb-ish of hot Italian sausage 1 tsp. salt
1 small onion, chopped 2 tsp. black pepper
3 cloves of garlic, chopped 1 tsp cayenne
2 carrots, chopped 2 tsp oregano
2 stalks of celery, chopped 2 tsp basil
3 cans of chicken broth 2 tsp thyme
2 cans of diced tomatoes 1 Tbsp parsley
OR substitute 1 can Rotel
2 cups dried lentils

Squeeze the sausage out of its casing (if it's links), brown and chop in decent sized chunks, but not too big. Drain the fat if there's a lot, otherwise a little fat never hurt anyone. Then dump everything else in the pot and bring to a boil. Reduce heat and simmer for 1 hour.

They all look good, but french onion is really easy and all you really need is beef broth, onions and butter.
