Squirrel Fricasse makes the the most tenderest, & flavorful that I've ever had. Just add a little bell pepper and garlic and it's really good

I've always stewed mine. May have to try it the other ways. I've had groundhog barbequed and it was really good cooked that way.

I didn't think you were actually going to eat one; we would slow boil them until tender and then put them in flour and fry them til brown and crispy.........like chicken

I've actually had squirrel before, and it isn't terrible, tastes a lot like rabbit. it was dredged in seasoned flour and fried, yumm.

Add bell pepper or whatever you want, but wine, garlic and the crushed red pepper are the key ingredients.
