It's crab cake time again..

I always make a big batch of crab cakes to freeze every fall..when the crabs are almost free. I'll get maybe 12-14 out of this batch..once I get all the claws done.

But it's break time...Tall Timbers Oysters and Beer 6 has started.

The bestie will be in Calvert in a few weeks and I believe she had her mother freeze a few pounds to bring back here.. Crabs and rockfish are about the only things I miss from Maryland.

That’s a bowl of warm water for dipping cold fingers from picking cold crabs on a brisk day.

Can I ask the difference between JO and Old Bay?

Not much difference. I find the JO to be saltier and "hotter" so I'd guess the differences between the two are all in the amounts of each ingredient.

JO:
Salt, Mustard, Red Pepper, Celery, Paprika, Cracked Red Pepper, Black Pepper, Thyme, Ginger, Laurel Leaves, Mace, Cinnamon.

"Homemade" Old Bay:
• 1 tablespoon celery salt.
• 1/4 teaspoon paprika.
• 1/8 teaspoon black pepper.
• 1/8 teaspoon cayenne pepper.
• 1 pinch ground dry mustard.
• 1 pinch ground mace (may substitute a teensy pinch nutmeg)
• 1 pinch ground cinnamon.
