Today's recipe is for baked cod and crispy potatoes:

Wash and thick slice (about 1/2" slices) 4 Yukon Gold potatoes (because they are tasty enough to not need butter). Toss potato slices with one Tbsp olive oil, and place in 9x13 glass baking dish. Sprinkle with salt and pepper and bake at 450 for 20 minutes.

Flip potato slices and bake 10 more minutes.

Rinse 2 large cod filets and pat dry. Rub filets with 1 Tbsp (total, not apiece) of olive oil. Move potato slices to the sides and place filets in the center of baking dish.

Sprinkle filets with lemon-pepper seasoning and bake 10-12 minutes, until fish is flaky and loses its opaqueness.

Makes 4 servings and MAN was it good! :yum:

They do, and they don't. The mechanism is complex - a carbohydrate response element binding protein is often triggered that tells the liver to turn some of the sugars (carbs) into fat EVEN while some of it is being burned and used for fuel - and so on --- but basically it's what we all know from experience. What doesn't get used gets stored as fat. Your body over time knows what your energy needs are and adjusts accordingly. It's not QUITE like a gas tank where, once you're done using the energy, the leftovers get taken off and put in your backside. Some of the fat creation process starts the moment the food arrives in your digestive tract. For a lot of people - such as myself - a lot of carbs does NOT translate into an energy surge, but seems to work like mega sleeping pills. Fortunately, because of my surgery, a lot of the carbs never get properly digested at all. (Unfortunately, the side effect of too many carbs is more unpleasant than for most people).

Good luck Vrai. Don't listen to the nay sayers. I've been told by a doctor the most important thing is to eat sensibly, excersise, and he suggested water instead of other drinks.

And that is exactly what Vrai is doing... and it sounds like it's working just fine for her...
