I make a simpler version of this and it's always a hit. Mine is:

cubed watermelon
chopped mint
feta cheese crumbles
red wine vinegar

Toss the melon with the mint and vinegar, toss with feta just before serving. (If you add the feta too soon it gets goobery and makes the salad look tired)
