Chocolate Eclair Cake
1 cup water
1/2 cup butter
1 cup flour
4 large eggs
1 (8 ounce) package cream cheese, softened
1 large box (5.1 ounces) vanilla instant pudding
3 cups milk
1 8 oz. container cool whip (you won’t use the whole container) or one batch of homemade whipped cream
chocolate syrup or homemade chocolate sauce

Instructions: Preheat oven to 400.
Lightly grease a 9″X13″ glass baking pan.

Eclair Crust: In a medium saucepan, melt butter in water and bring to a boil. Remove from heat. Stir in flour. Mix in one egg at a time, mixing completely before adding another egg. Spread mixture into pan, covering the bottom and sides evenly. *If the sides of your pan are too greased you won’t be able to get the mixture to stay up the sides so make sure to just lightly grease.
Bake for 30-40 minutes or until golden brown (Mine only took 25 minutes.) You may want to check it occasionally-you don’t want to overcook the crust, it will ruin the cake!

Remove from oven and let cool (don’t touch or push bubbles down).

Filling: Whip cream cheese in a medium bowl. In separate bowl make vanilla pudding. Make sure pudding is thick before mixing in with cream cheese. Slowly add pudding to cream cheese, mixing until there are no lumps. Let cool in fridge.When the crust is completely cooled, pour filling in. Top with layer of cool whip however thick you want it and serve with chocolate syrup.

*If you want to make this even better use homemade whipped cream.

I wish someone would make all these cakes and just give me a bite. I don't even want a whole piece, just a bite.

My neighbor makes mille feuille, which is puff pastry layered with strawberries and custard. Holy hell it's good!

How is it that the people who live in your house aren't enormously fat??? Do you eat this stuff and then bulimia it back up??

Wow, that was quick, let me know how it is. I wanted to make it today, feel to crappy to go to the store. I'd rather not spread my germs anyway.

Bob won't eat it at all, Bubba only eats a smidgen of it, and I only want a piece of it....the rest goes to work for folks there to eat it.

Want me to bring you a piece tomorrow, or why don't you come down for dinner tonight?

Thank you but I'm supposed to have dinner plans unless I cancel them because of being sick from not smoking. :lol:

Because junk food doesn't make a person fat. Over-eating the junk food, not eating fruits and veggies, and not exercising: that makes people fat.

She did it again

1 package white cake mix (regular size)
1 package (3 ounces) strawberry gelatin
1 cup water
1/2 cup canola oil
4 egg whites
1/2 cup mashed unsweetened strawberries
Frosting
1 cup heavy cream,
1 cup confectioners sugar

2 cups fresh strawberries, sliced or halved.
Directions

In a large bowl, combine the dry cake mix, gelatin powder, water and
oil.
Beat on low speed for 1 minute or until moistened; beat on
medium for 4 minutes.
In a small bowl with clean beaters, beat egg whites on high speed
until stiff peaks form. Fold egg whites and mash strawberries into
cake batter.
Pour into two greased and floured 8-in. round baking pans. Bake at
350° for 25-30 minutes or until a toothpick comes out clean.
Cool for 10 minutes before removing from pans to wire racks to cool
completely.
To prepare frosting, beat cream and sugar until stiff peaks form.
Place first cake layer on serving tray, top with a layer of whipped cream and strawberries, place second cake layer on top and top with remaining whipped cream and strawberries.

Lemony Lemon Brownies

Ingredients:

1/2 cup unsalted butter, softened
3/4 cup flour
2 eggs, large
2 tbsps lemon zest
2 tbsps lemon juice
3/4 cup granulated sugar
1/4 teaspoon sea salt

For the tart lemon glaze:
4 tbsps lemon juice
8 tsps lemon zest
1 rounded cup powdered sugar

Directions:

1. Preheat the oven to 350 degrees.

2. Grease an 8×8 inch baking dish with butter and set aside.

3. Zest and juice two lemons and set aside.

4. In the bowl of an electric mixture fitted with the paddle attachment, beat the flour, sugar, salt, and softened butter until combined.

5. In a separate bowl, whisk together the eggs, lemon zest, and lemon juice until combined.
6. Pour it into the flour mixture and beat for 2 mins at medium speed until smooth and creamy.

7. Pour into baking dish and bake for 23-25 mins, should turn golden around the edges.

8. Allow to cool completely before glazing. Do not overbake, or the bars will dry.

9. Filter the powdered sugar and whisk with lemon zest and juice.

10. Spread 1/2 the glaze over the brownies with a rubber spatula and let glaze set.

11. Spread 1/2 the glaze over the bars, and let it set (not harden like most).

12. Cut into bars and serve.
