Asparagus is very inexpensive and I am making round #2 of quiches. They freeze well and can be eaten for breakfast, lunch or dinner.
I buy premade deep dish pie crusts (when I can find them, that is) and prebake them for about 15 minutes to not have a gummy crust.
The first ones had ham, mushrooms, bacon, swiss cheese and asparagus (and of course: eggs). At the grocery store today, I totally forgot ham so I will make do with what is in the fridge. Maybe some fresh spinach and broccoli?
