Every weeknight? I would think you two would have to neg. together what a fair price would be.

If it's just here or there, I think there were some threads started awhile back. It all depends on how many children etc. you may want to do a search.

this is a one time thing. 1 infant....no other duties.

As someone mentioned, you two need to negotiate a reasonable price, but from what I gather it is a favor she's doing for you and you said she's leaving work early to do it...I think?
What does she get paid hourly at work, and how much time is she missing to help you? I'd say $10/hr for as long as the baby is normally awake, so figure from 4-7,8,9 or whatever...then maybe $5/hr for the hours the baby should be sleeping?
It will be from $40-70, in my opinion.

Yeah, okay.
If it's a friend helping you out, then she probably won't request too much pay. But I would say no more than $35 or $40. The infant will probably go to sleep around 7:30 or 8:00 and will sleep most of the time.

My son gets rewards for helping us out. Like we got him the 360 for Christmas. I also get him games here and there. He likes Iced coffee and loves it when I bring him some home, or Starbucks in a jar. He is very easy to please. I have even surprised him with Asahi takeout.
