OK, now that I have your undivided attention, I have a bacon question.

What is your favorite type of bacon? Include as much info as brand, cut & cure.

I admit to just being passe about my bacon selections in the past. I'm partial to thick cut. I have no brand loyalty. I use to look in the plastic window and try to select a piece that looked to have a lot more meat than the other packages. I just had some bourbon cured bacon and it has me questioning my past neutral bacon choices.

I'm crazy about the thick-cut pepper bacon that Hole in the Woods Farm sells. Chit is addictive. Their apple smoked bacon isn't too shabby either.

for years I got this Thick Cut, Brown Sugar Cured Bacon ...... baked @ 300 until gooey chewy [like bacon candy]

sadly this is NLA ...
... so we bounce between Maple and Apple wood - thick cut

I don't know the brand - it comes from either Wal-Mart or Shoopers or Aldis

We just got some beef bacon at an Amish market in PA. Normally I'm a bacon purist but this looked really good, so I can't wait to try it.

Thick cut (any brand) is the best!! I just found a new recipe that I tried over the Christmas break. I took a package of thick cut bacon and cut the slices in half and laid them on a baking sheet (with sides to catch the grease). Cover with peppercorn, fresh rosemary, brown sugar and a bit of maple syrup. Bake at 350 degrees until done. AMAZING!!!!!!!!!!!!!!!!

A friend of mine gave me a recipe for a brine and then cold smoke. Just gonna buy the pork belly and start making my own bacon. :yum:

I'm the opposite, I prefer more fat than lean. I'm cooking bacon as much for the dripping as for the meat.
