Bread baking maniac!

I've been baking bread since I was a kid - can't bake anything else, not even a decent cake, but I can typically turn out a pretty good loaf of bread. Anyway, recently I've become interested in artisan breads, with a denser texture and more open crumb, and a crunchy crust.

So now I'm on a mission to perfect. :cartwheel

So to you cooks, do you ever get it into your head that you want to learn to make something, then make it obsessively? Or am I the only nut?

I do the same thing. I can cook bake pretty much anything and everything from scratch... except candy. Everytime I make candy whether it be fudge, brittle, taffy, etc.. it never turns out right!

I have been on a mission to make the "PERFECT" peanut butter fudge... alas no luck so far :bawl:

What kinda bread are you focusing on?

I do the same thing. I can cook bake pretty much anything and everything from scratch... except candy. Everytime I make candy whether it be fudge, brittle, taffy, etc.. it never turns out right!

What kinda bread are you focusing on?
You probably need a more accurate thermometer, put it in boiling water and see how far off of 212°, add or subtract however much it's off.

The kind with a chewy open crumb and crunchy crust, instead of the soft sandwich style that I always made before. I finally learned the secret to that crust, so I'm kind of excited about that:

The dough must be quite wet, and not kneaded but mixed by hand. Then you put a pan of water in the oven while the bread is baking, and bake at 450 for 30 mins.

When I cut a chunk off and saw that it turned out, I did a little dance around the kitchen. :lol:

Sounds yummy! Good for making all different types of sandwhiches. We just got a panini press so something tells me I will be testing out a few new bread recipes myself.

Yes, to the obsessing part of trying to perfect something. As soon as I'm done with one meal, I'm thinking about the next time I make it (or write things down to remember for the next time). Or the next thing I'm going to make, even if it's a completely different dish. Addicting hobby, this cooking thing, but I'm lovin' it (especially with all of the foodies on these boards).

And no better place to act out a cooking obsession than right here on somd. :lol:
