Buzzards' Breath Chili for a lot of people.....
10 lbs. boneless chuck roast, cut into one inch cubes
2 lg. (18 oz.) cans tomato sauce, with an equal amount of water
3 lg. onions, chopped
6 cloves garlic, crushed
4 cans beans, rinsed (any one kind or mixed)
2 jalapeno peppers, diced
6 oz. red chili powder (this means ground red chiles from the Mexican food section--use a milder powder or mix of mild and medium, according to taste)
2 tbsp. ground cumin
2 tsp. oregano
2 tbsp. cayenne pepper (again, vary this according to taste--if you have hot chili powder, you might not need cayenne)
salt and pepper to taste
Brown meat in skillet in batches and dump into a big pot. Add tomato sauce and water. Add remaining ingredients and simmer about four hours. Serve with coleslaw underneath (this sounds weird but it's REALLY good). Offer Fritos, shredded cheese and chopped onions for on top. Makes enough for 15 to 20 people (!).
Coleslaw:
For each package of precut coleslaw mix add:
1 c. mayonnaise
1/2 c. green onions/scallions, chopped
3 tbsp. white vinegar
1/2 tsp. Worchestershire sauce
1 tsp. sugar
salt and pepper to taste
