Can of pumpkin

I have two cans of pumpkin that I don't know what to do with. They were on sale at Whole Foods so I grabbed them, and now I need to figure out what to turn them into.

Any ideas besides cakes or pumpkin butter?

A lot of dogs like pumpkin. I have hooves and bones I fill and freeze and they get them as a treat almost every night.
Plus it has a lot of fiber and is filling. Also good for when they are backed up and/or squirty.

I make these pretty yummy pumpkin protein pancakes when I'm on paleo with almond flour. I usually add some ground flaxseed too.


also, in my last work office I used to make these cookies all the time, I'd double the batch and bring in like 50-70 cookies and they'd all be gone by COB :biggrin:

1 can pumpkin puree
1 box of spice cake mix
1 12 oz bag chocolate chips

mix, 1 large tablespoon-ish scoop per cookies onto greased sheet, bake at 375 for 15 mins.
stupid simple, super soft, and very yummy :yum:

pumpkin cupcakes!! all it takes is a box of cake mix (I normally use spice cake) IF I remember correctly the pumpkin replaces the oil in the recipe, would have to double check though.

super yummy with homemade dulce de leche frosting!

add a beaten egg, ricotta, parmesan, favorite herb, s&p, etc. to canned pumpkin, make ravioli using wonton wrappers, serve with sage butter, boom!

or you can go the sweet route...

How about a soup base kind of like butternut squash soup, garlic, onions, cream etc.

YUM! That's what I'm looking for, something savory and not a dessert. :yay:

pumpkin chilli, or a "sauce" made from the pumpkin filling - add garlic and red onion, soup, pumpkin strata, pumpkin and onion and whatever pizza, and so on.

I actually found pumpkin one of the easiest non-meat proteins to incorporate in my diet. I've even made pumpkin tacos.

Spicy Pumpkin Dip

Ingredients

1-1/4 cups cold apple juice
1 package (3.4 ounces) instant vanilla pudding mix
1 cup canned pumpkin
1/2 to 1 teaspoon pumpkin pie spice
Sliced Apples and Pears

Directions

In a bowl, combine apple juice and dry pudding mix. Beat on low speed for 2 minutes. Stir in pumpkin and pie spice. Let stand for 5 minutes. Serve with Apples and Pears. Store in the refrigerator up to 3 days. Yield: about 3 cups.
