Christmas cookies...HELP!!

Need some last minute easy-but-good-not-too-many-ingredients-Christmas cookie ideas for an office Christmas party. Bars, drops, anything like that. I've got to throw together some goodies for a party and I've only got Wednesday evening open to do it. Help!

No Bake Snacks: (makes approx. 5 DOZEN - easy peasy!)

Mix in a medium saucepan:
2 cups sugar
¼ cup cocoa
½ cup milk
¼ lb. Butter

Put pan over medium heat & cook until it starts to boil. (do not leave pan unattended!) After it reaches a boil, remove pan & cool for one minute. Then add:

1 tsp. vanilla
1 pinch salt
½ cup crunchy peanut butter
3 cups quick cooking oatmeal.

Stir well. Drop by teaspoonfuls onto waxed paper.

White Trash Candy Snack
Ingredients

2 cups Chex cereal
2 cups Cheerios toasted oat cereal
2 cups peanuts or 2 cups salted prezel sticks
2 cups M&M's
3 (16 ounce) bags white chocolate chips

Directions

Mix all of the dry ingredients in a large bowl.
Melt the white chocolate chips in the microwave and then pour into the bowl with the dry ingredients.

Lay the mixture flat on cookie sheets and refrigerate until hardened.
Remove from refrigerator and break the mixture apart.

Choco Carmel Nutty Pretzel - (another Whiskey Tango speciality)
Preheat oven to 350
take mini square pretzels
line them up on a baking sheet
Place a Rolo candy on top of pretzel
bake for 5 minutes or so until candy is soft
take a pecan half and smush the melted candy down
Let cool
will make as many as you buy supplies for

Cake mix Snickerdoodles:

3 tbsp sugar
1 tsp ground cinnamon
1 pkg Duncan Hines® Moist Deluxe® Classic Yellow Cake Mix
2 large eggs
1/4 cup vegetable oil

Preheat oven to 375 ºF. Grease cookie sheets.

Combine sugar and cinnamon in small bowl.

Combine cake mix, eggs and oil in large bowl. Stir until well blended. Shape dough into 1 inch balls. Roll in cinnamon-sugar mixture. Place balls 2-inches apart on cookie sheets. Flatten balls with bottom of glass.

Bake at 375 ºF for 8 to 9 minutes or until set. Cool one minute on cookie sheets. Remove to cooling rack to cool completely.

Oreo Balls!!! Easy and to die for!!

I usually put a few in a christmas cellaphane baggy. They are always a big hit! I just dropped off my baked goods for family last night and when I got home there was a message from someone that said they were fabulous & they'd pay me to make them 3 dozen for their holiday work party :lol:

(I usually do the mint ones around the holidays)

1 package of Mint Oreos (place in zip bag and crush slightly)

3/4 package of softened cream cheese

1 package of white chocolate chips melted

a few candy canes crushed up


Mix oreos w/ softened cream cheese and roll into balls. Let chill in fridge while you melt the w/chocolate. Dip balls into chocolate or drizzle over top (which ever you prefer) sprinkle tops of balls w/ crushed candy canes.

Thank you! exactly the sort of thing I was looking for! I'm also going to make those "bird's nests" - melt chocolate chips and butterscotch chips and mix together - add peanuts and crispy chow mein noodles. Drop small clumps onto wax paper and let them "set up" - I'll probably add some Christmas color sprinkles to them.

Rum balls! OH yes! And definitely the oreo thingies if I can find the right kind of oreos!

Oh, man, I miss these! I love them but I'm the only one who will eat them (2 of the 4 kids allergic to nuts & hubby hates anything with oatmeal) so I stopped making them years ago...

They were my favorite cookie! :drool: Don't dare make them now as I'd end up throwing some out or eating them all! :lol:

Make them and give all but a dozen away! :yay:

ah yes, you are an evil person -- I could very well do that as I just realized that I have every single ingredient listed on hand as I type this. I'm sure I could find someone to give them to after I apply that first dozen directly to my hips! :lmao:

I want to make some of those ritz covered in chocolate ..Maybe put peanut butter in the middle of 2 ritz then dip them in white chocolate or milk chocolate :)
 
Mexican Wedding Cookies (they look like little snow balls too, yummm)

Ingredients
1 cup unsalted butter, at room temperature
1/2 cup confectioners’ sugar, plus more for coating baked cookies
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour, plus more for dusting hands
1 cup pecans, chopped into very small pieces

Directions
Preheat the oven to 275 degrees F. Line cookies sheets with parchment paper.

Using an electric mixer, cream the butter and sugar at low speed until it is smooth. Beat in the vanilla. At low speed gradually add the flour. Mix in the pecans with a spatula. With floured hands, take out about 1 tablespoon of dough and shape into a crescent. Continue to dust hands with flour as you make more cookies. Place onto prepared cookie sheets. Bake for 40 minutes. When cool enough to handle but still warm, roll in additional confectioners' sugar. Cool on wire racks.

Mmmm this guy I used to work with would bring these in periodically, his wife made them...OMG they were soooo freakin good! I always forget about them though. I should make some for work tomorrow, we're doing our gift exchange and I'm bringing a cheese ball in but who wouldn't want these too? :biggrin:
