Corned Beef & Cabbage Recipe

Anyone have any good recipes for Corned Beef? St. Patty's Day is around the corner and I wanted to do something different other than boiling that slab of corned beef with cabbage.

Bon Appetit Magazine provided instructions on how to corn your own beef but I'm like, sheesh, the corned beef is already sale. Note: Corning your own beef is like 3-4 days involving a slab of beef brining away in the fridge. Yikes.

Anyway, they did provide some other ideas for the boiling stock, like adding a 1/4 cup of Guinness Stout along with the water to cover the meat (add the pickling spice along with the other two) then boil that meat for 2 1/2 hours) then pull the meat out, and add cabbage and turnips, then let 'em simmer for 20-mins, then put the meat back in to warm up.

If anyone has any creative/tasty variations on this old standby, please post for us all.

I toss out the spice packet it comes with, add about a cup of chicken broth and approx. 1/4 cup worcestershire sauce into a crock pot with the corned beef and leave. Always comes out really good. Sometimes I'll baste it with mustard too but I prefer it without.

This is the one that I'm going to do. I think I'm going to use a pre-corned brisket though.

We corn venison, brining for about 10 days in the 'fridge...YUMMY!!!!

The Irish Heritage Cookbook by Margaret M. Johnson has a good recipe on page 63-64. I don't have the time to re-type it right now but if you look it up on Amazon, you can use their reader to find the pages -- just search for corned beef in the reader search box. It is prominently marked "copyrighted material" so I won't try to copy & paste, but you can see it enough to see if it is what you are looking for.

The Lifeforce Mill brown bread recipe from the same book is the best recipe EVER for brown bread!

My mom used to just get the packaged corned beef and throw it in a pot with potatoes, carrots & cabbage (cut into pieces), water, salt & pepper and just boil it till it was done. Her Irish grandmother showed her mother, who showed Mom. Unfortunately, I can't get anyone in my house to eat the stuff so I haven't had it for years!

Already have the corned-beef brisket, and the cabbage. Think I'm gonna toss them in the pressure cooker this year, since St. Patty's Day is on Tuesday instead of on the weekend. I don't care for corned beef, so I'll also be making a smaller pot of cabbage and meatballs!!
