Crabcakes

I am fairly new to SoMD, but I have fallen in love with Stoney's Crabcakes. Would it be sacreligious to ask if anyone has the recipe that they use, or is that a closely guarded secret??

Also, where is the best place to get crab meat if you are a novice picker who does not want to spend three days picking enough for a single cake? :howdy:

It wouldn't be a sacrelige I think, so feel free to ask, but I don't think most people know it. Most people have their own crabcake recipe.

My wife uses the recipe she got from her mom for instance.



And it's one of the many reasons I married her.

I think most fresh seafood places let you buy backfin by the container.





Or, you could just get a bushel of steamed crabs, invite me and the missus over, and after we all finish eating, She and I will shell you a pound or two.

I always thought BK Miller in Clinton had the cheapest jumbo lump around (you don't want backfin for crabcakes). I haven't been there recently tho. Also try Nick's in Waldorf. I don't know of any places down in the County.

I didn't price it but i have seen it at Nick's in Prince Frederick Calvert Co.

Are you new to MD or just SoMD? I get the best results using this and their recipe:

OLD BAY® SEASONING

You should be able to find the spice in any local grocery spice aisle.

The meat? Listen to the locals. I'm not from these here parts.

Read the label carefully

If you buy crabmeat at Nick's or B.K.Miller, carefully read the label. A lot of their "sale" crabmeat is not blue crab. It is from Indonesia, Malaysia, etc. Fine for what it is but it is not blue crab and does not taste the same. Same goes for Phillips brand supposedly Chesapeake crab, but it just ain't. Get your crab from local suppliers like Thompson's, or Copsey's or any other local fresh seafood dealer and you will definitely be able to tell the difference.

Well I have been in Charles Co for four years, but new to the forum- and my first experience with crab was last summer (real crab I mean).

I did see it at Nick's yesterday for 12.99, I didn't check to see where it was from.

Someone said that backfin is not for crabcakes, but from what I have been reading most recipies call for that...

Also what is the feedback- bread or saltines??

Backfin is fine for making crabcakes, jumbo lump is better, but quite pricey.

I like bread beter mostly because I'd never buy unsalted crackers, but I don't want too much salt in the crabcakes.
The biggest thing to realize about the bread or crackers use in the crabcakes is that it isn't there as a filler, it's there to keep moisture in the crabcakes, that's why it's mixed into a kind of mush with the mayo or egg.

Go to Jerrys in Prince Frederick. Their crabcake is better than Stoneys.

Best crabcakes, by far, are at Scuttlebutt's on Cobb Island. They're made there, are uber delicious and never have any cartidge in them. Phenomenal.

I've never been a huge fan of crabcakes at all, but here in Florida, they claim to have "Maryland Crabcakes" and the SUCK! I have had them at several restaurants here and there is no "Maryland Crabcake" outside of Maryland.
