Anyone have any interesting croaker recipes? Fried seems to be the most popular but I was looking for something different.

I stuff them with fresh herbs and sliced lemon and then drizzle on some garlic oil and throw in a dash of Pampered Chef Citrus rub. Throw it on the grill in a grilling basket. It's quite tasty.

The fresh herbs I used were Rosemary, parsley, and thyme.

I fry them for fish tacos or blacken them. If I blacken them I top them w/ a little herb butter (1 stick of butter, 1T lemon juice, lemon zest, parsley, chives, thyme, garlic, salt & pepper put everything in food processor and whirl. then place in plastic wrap shape into a log and chill. slice & serve when ready)

I treat croakers like catfish. So however you cook catfish works.

I like to S&P the filets, smother them in Duke's mayo, wrap individually in foil with pepper slices, and bake at 450 on a cookie sheet for 15-20 minutes. I also modify it and add a spoonful of salsa and some black beans.

Another way is to slice it up like chicken nuggets. Take a box of that instant cornmeal and mix it with some old bay. Dip the fish in Duke's, coat in the cornmeal want-to-be stuff, and then place in a cooking sprayed baking dish. Bake at 350 for thirty minutes. Mix some more mayo with pickle relish and you got some tarter sauce to add on top when it comes out.
