North Carolina Chopped Barbeque Pork
2 lbs pork shoulder
3/4 cup cider vinegar
1/4 cup catsup
1/2 teasp salt
1/2 teasp celery seed
1/8 teasp cinnamon
1/4 teasp chili powder
1/4 teasp nutmeg
1/4 teasp sugar
Place pork in crock pot. Stir remaining ingredients together and pour over pork. Cover and cook on low for 6-8 hours.
Remove pork from juices. Shred pork, removing hunks of fat if necessary. Return to crockpot and serve.
Had this Friday night on rolls with coleslaw - yum.
Took it out of the juices to refrigerate (it's a bit greasy).
Tonight, sautéed onions and peppers, added the shredded pork and some taco sauce and heated through. Served on flour tortillas with lettuce and cheddar.
And have two quart packages of shredded pork in the freezer (keep forgetting we no longer have three boys + their friends eating).
I used pork loin I found on sale, and I've done it before with country ribs - whatever is on a good sale.
