The Corn Dogs of Easter | Food for the Thoughtless by Michael Procopio
Ingredients:
• 2 cups all-purpose flour
• 1 1/3 cup yellow cornmeal
• 4 tablespoons sugar
• 2 tablespoons baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon dry mustard
• 1/2 teaspoon ground white pepper
• 2 teaspoons kosher salt
• 1 3/4 cups whole milk
• 1/2 cup buttermilk
• 2 eggs, lightly flogged
• 16 6″ hot dogs. I have chosen to use chicken dogs, which is more than likely still offensive to practicing Catholics on Good Friday, but probably less so than beef franks.
• Vegetable oil, for frying
• 4 pairs of wooden take-out chopsticks to serve as posts, 8 coffee stirrers to serve as crossbeams.
