Diabetic or Low Carb Eating

Anyone on here eat low carb? In the past I've had great success with it and was wondering what people ate, what their favorites were etc.

I don't but I can tell you that Roasted Garlic Mashed Cauliflower and Spaghetti Squash are good.

Those low carb tortillas from Ole are good, lots of fiber. Ezekial bread is the best low carb bread out there. A little bland in the low sodium version.

I could never get used to that one.

Never liked white, always preferred stone ground wheat but lately I've been buying multigrain breads.
It's not a great sourdough, but I was pleasantly surprised.
 
I have diabetes on both sides of my family, so I've done low carb for about two and half months now. My grandfather and uncle went blind from the disease, and I am pre-diabetic.

I also have been trying not to eat after 6-7pm, and I don't eat until 10-11am. Schmidt makes 6-4-7 bread which has 6 net carbs per slice, and seven grams of fiber. It's white bread, but pretty good.

I eat a lot of egg whites, Greek yogurt, spinach, grapefruit, seafood, other vegetables, and limit my fruits to low sugar types like berries. I limit myself to one or two pieces of the low card bread a day, no pasta/rice, limit my starchy vegetables, etc. I started at 255 around the beginning of June, and I'm 230 now. I'd still like to lose 30 more pounds. It was very difficult for me to eliminate sugars and most simple carbohydrates, but after a week or so it became easier. When I do eat fruit, it tastes sweeter and I don't have as many cravings. Exercise and lifting weights again has helped with the cravings as well.

In some ways this has been harder for more than when I quit smoking and drinking years ago. If I can be of help to anyone, let me know. For me it was a matter of doing this, or dying younger, so I had to take it seriously.
