Making a bibimbap (aka "bowl of love") or ramen bowl with spaghetti squash instead of rice or noodles.

I'm not a huge fan of squash as a pasta fake out because it is NOTHING like pasta in any way, especially since it can stand alone and not have to pretend to be something else. And I'm sorry, but marinara and meatballs over zoodles or spagsq is vile, I don't care what the women's magazines say.

But I was wondering how I would live without ramen while I'm trying to drop some weight, and I came up with this twist. The bibimbap was a no-brainer - it's just normal fixin's but over a bed of sizzling spagsq in the dolsot instead of rice. The ramen was a little trickier to figure out because squash soup sounds disgusting no matter how good it might taste. I actually made my broth from scratch instead of wasting one of my yummy ramen base packets on, you know, squash. Plus I'm trying to stay away from unnatural chemical compounds right now (unless it's Diet Coke). While the soup wasn't "noodly" it was very good and super filling, with veggies and meat as a garnish like normal.

So for anyone who cares, spaghetti squash was made to be turned into Asian food. :yay:

Sounds good! I don't serve the spaghetti squash as a pasta fake out, but I do like the marinara and meatballs with it! :lol: I just love spaghetti squash - from buttered and tossed with grated parmesan to a hot dish served with the sauce, meatballs and cheese. :yum:

I've not gotten one of those zoodle makers yet, though. I keep meaning to. :yay:

Don't get one - you can have mine since I won't be using it when we're on the road.

AND! I finally figured out how to deal with zoodles so they don't water down everything they touch. You always see those commercials where the zoodles are smothered in meat sauce and they look just like spaghetti noodles? This is a lie. They are a vegetable, and they act like vegetables. If you spiralize your zukes, then spread the zoodles out on paper towel, give them a light salting,and let them rest, they'll release some of their water. Then you quickcook them - toss them around in a hot skillet - for just a minute or so to keep them crisp. If you like marinara or meat sauce over spagsq, you'll really like it over zoodles. I like them better as a base for other vegetables in bowls of love.

My hub went paleo 2 years ago because of his ultra running. I used to make a broccoli soup, but have substituted cauliflower, and it was just as good. Because of my hub, I am eating healthier now. I have a recipe for a paleo brownie if you are interested. :smile:

I'm not a big fan of cream of vegetable soups, but that would be the perfect base for a chicken chowder. Mince up some carrots and celery, fry up some bacon and crumble it in there. Mmmmmmmm..... I'm going to Pin that recipe. :yay:

You may also want to try Miracle Noodles. They don't have much of a taste on their own, but they will absorb the taste of whatever sauce you use and their texture is much better than most other carb-free noodle substitutes.

I don't like food that pretends to be other food. Like tofu for example, I just like tofu. I don't like it when it's pretending to be hot dogs or turkey.
