Favorite homemade Christmas cookies

Just finished up making a big batch of Cinnamon Chip Snickerdoodles. Next up is Scandinavian Almond Bars. After that, Cowboy Cookies. Of course I will also be doing the standard Chocolate Chip and Sugar cookies, but was looking to see what others have as favorites I might try to make.

Any suggestions? TIA.

Edit: forgot the Chocolate Crinkles and Peanut Butter Blossoms.

Bann makes these shortbread cookies that are addictive. I'm not a cookie person and usually Monello eats most of our cookie gifts, but I get stingy with the shortbreads.
 
Mom used to make a fruit cookie with a molasses cookie base. Haven't had one of those in forever.

I don't usually make cookies but I do make miniature walnut cakes. Way too easy to eat too many.

The ginger snap cookies that my great aunts used to make on the farm.
When I make them they're just not the same, it must be that they used a wood fired West Bend stove / oven.

I am sure the wood-fired stove makes a big difference. I was going to make Catt's gingersnaps but forgot the ginger. :doh:

Hahahahahahaahahahahahaha,. Then it's a wish cookie,. We can call them " Brown Molasses Snaps.
I used to over mix brownies, while baking they would rise and turn into a Brownie Cake.

From the Italian side of the family - Italian Christmas cookies (with colored sprinkles). From the German side of the family - Sand Tarts.

I made some soft ginger cookies last weekend, and they were phenomenal. I used Ina Garten's "Ultimate Ginger Cookie" recipe, and used almost an entire bag of crystallized/dried ginger from Trader Joe's.

Yum, yum, yum. :drool:

I got the shortbread recipe from his sister, who uses a recipe of her (ex) mil. They are super easy to make! And they make a lot! They've become my personal favorite.

And yes! Very addictive! Oh, sure - you can "snazz" them up by dipping an end in various types of chocolate - but for me, I love the simplicity of a plain shortbread biscuit cookie.

My usual Christmas cookies are the basics: chocolate chip, peanut butter, and the "no bake" cookies. My dad, brother and boys all loved those 3. I used to do decorated sugar cookies, but not so much these days. A couple years ago I added another favorite of Foxhound's: Oatmeal Raisin. If I have time, I make other types - but I typically stick to the basics.
