This was a topic of which was a toss up of where to post. Since we have so many beavers in the area, I figured, why not here.

Akin to the Liver and Onions thread. I wonder why eating beaver was ever banned in Minnesota? Has anyone ever eaten a nuisance beaver? I'm sure there is a joke, or two, or three, in there somewhere. :whistle:

Probably about the same as groundhog.

On Bizarre Foods, Andrew Zimmern was in WV and went ground hog hunting. The old guy he was with said the secret to preparing one was removing as much of the fat as possible. The meat is surprising lean
I had an aunt who cooked groundhog. Don't believe everything people tell you about how things taste when you remove the fat. Ask Gilligan about sea ducks.
She also put coconut in damned near everything. Ever have mashed potatoes with coconut? Makes 'em "fancy".
