French Onion Soup

I made it for the first time a couple days ago, YUMMMMM!!!

1/2 cup unsalted butter
4 sliced onions
2 gloves chopped garlic
2 bay leaves
2 sprigs of thyme
salt and pepper
1 cup red wine
3 tbsp flour
2 quarts beef broth
French bread
Gruyere cheese, grated

Melt butter and add onions, garlic, bay leaves and thyme (add salt and pepper) then cook until the onions are soft and caramalized. Add the wine and simmer for until most of the wine evaporates. Sprinkle the flour over the onions and cook for about 10 minutes to remove the flour taste. Add the beef broth and simmer for about 10 minutes.

Add a slice of French bread to the top of your soup (in a bowl, of course) and top it with grated gruyere cheese then broil it until the cheese is bubbly and slightly browned/crispy.

It was SO good Sunday, even better last night and I can't wait to finish it off for lunch today :yum: (less the french bread and cheese since there's no broiler at work, hehe)

Love it. :yay: I made it back in July and it was delicious. There are a few recipes on this thread, as well.

I think the main thing that makes good French onion soup a great soup are the caramelized onions. The 'reduced all the way down to brown' onions, and not just softened (like some recipes call for). I don't think it hurts to add a few more onions into the mix, either.

Your recipe sounds good to me from reading through it, but...
