Prepped a chicken for later. Cut a whole chicken in half, froze one half. The other got stuffed and put in a roasting pan on a rack, seasoned. Put the giblets, onion and carrots in the bottom of the pan. When I roast it later, I'll add water to make gravy. Going to roast it until it's mostly done, then make a mixture of orange marmalade to cover it, then finish roasting. Baked 'tater on the side.
