Help! Help! Lumpia emergency!

I'm making lumpia to take to a NYE party and I'm not sure how to transport it so they don't get soggy. I'm thinking paper towel at the bottom of a glass dish, then single layer the lumpia between more paper towels.

Anyone have a better idea?

That is your best bet. However, either way they will still get soggy. Unless you want to fry then at the party.

In Guam, we used newspaper and put lumpia on cloth and put the cloth on newspaper...made it easier to lift out of pan (the cloth), and newspaper absorbed the moisture....Have a wonderful time!!!
 
Use the paper towel to drain them, but don't leave the paper towel in there while you transport. That will def make them soggy. And covering them keeps any steam (water moisture) from escaping, and that will make them soggy too. They need to cool before you cover them.

Best to fry them there.

Can't fry them there but I probably could warm them in the oven. So maybe fry them up, let them cool on a rack, then stick them in the oven at the party? I'm trying to remember what Emily's does when they do lumpia for parties.

That should work. It won't be like taking them right out of the oil. Can you make a quick batch and test the theory?

Fresh fried is always best but any lumpia is great. I miss it. Havent had any for at least a yr. I can get it in Cincinatti but not as good as my connection in St Marys co.

Emily's uses an aluminum pan lined with a few layers of paper towels and covered.with aluminum foil. When done this way, the foil traps the heat and turns the crispy wrappers a little rubbery. It's still good, but not as good.as freshly made lumpia.

Well you should just give them all to me & that will solve the problem! :biggrin:

Maybe instead of foiling them, I'll use something that won't trap the heat and make condensation - a towel or something. Then I can pop them in the oven for a few minutes when I get to my destination.

Emily's is a bit far for me today.

BUT, I already have pork roast, sauerkraut, mashed potatoes, (fresh) green beans & chunky applesauce w/ cinnamon & nutmeg planned for our NY dinner.

I was in there Thursday for lunch, and I believe she had a sign up saying she will be closed today and tomorrow (1st & 2nd).

Another day then. I'll be going in the opposite direction today anyway.
