Homemade Baked Beans

In fact, here is my bacon jam recipe:

3 pounds bacon
3 large yellow onions, peeled and thinly sliced
8 cloves peeled and smashed garlic
1/2 cup Balsamic vinegar
1/4 cup packed light-brown sugar
1/2 cup real maple syrup
1 Tbsp instant coffee
1 tsp salt
Black pepper to taste

Slice raw bacon into 1/2" juliennes and fry until crisp. Remove bacon from pan and drain on paper towels. Add onion and garlic to the bacon fat and saute until soft and carmelized. Add rest of ingredients, including bacon, and bring to a boil. Once it starts boiling, reduce the heat and simmer for about an hour until it's nice and thick.

To turn it into baked beans, add pre-cooked beans (canned or fresh) and pop it in a 350 oven for an hour or so.

I promise these are the best baked beans you will ever eat. :yay:

I will be making this tonight. Do you think it will make in a crockpot? The last part.

Sure. I've never tried it, but I don't see why not. They might be a little saucy, but that's okay.

Also, I left out the part about getting rid of some of the bacon fat before sauteing the onions. You only want about two Tbsps of grease in the pan.

Ok thanks! I'll save the unused bacon fat for another dish. Nothing beats bacon fat.

I was reading in one of my foodie magazines how chefs actually make candles out of leftover bacon grease. You just pour it into a mug and set a wick, then keep it in the fridge. When you want a bit of bacon fat for cooking, you light the candle and pour out the fat as it melts.

I keep meaning to do this but haven't yet.

Food Network, Cook's Country, Cook's Illustrated, Racheal Ray and Bon Appetit. I think I'm not going to renew RR, though, because she's getting boring.

Cooks Country and Cooks Illustrated are my two favorite magazines. I finally caved in and subscribed to Cooks Country online as well to watch all of the videos - even though I've seen them all on the WETA-CR channel.

Bon Appetit has changed in the past couple of years; can't put my finger on why I'm not all that enthusiastic about it lately.

I didn't have maple syurp or instant coffee so i made my own little recipe..lol.
2 cans drained and rinsed northen white beans
1/4 minced onion
4 strips of maple bacon( could use more...lol)
1 tbsp basamic vinager
1/2 tbsp chili powder
1 tsp ground mustard
1 tsp ground garlic
1 tsp curry powder
1 tsp of mrs. Dash table seasoning
Pinch of pepper
1 tbsp of molasses
1/4 brown sugar
1.5 tbsp soy
1 tbsp teriyaki
5 tbsp ketchup
1/2 tbsp of apricot jam
1/2 tbsp of apple jelly
3 tbsp of butter
Squirt if yellow mustard
1 tsp of dice jalopeno if you like

Cook bacon to your liken. Remove bacon, drain all but 2 tbsp of bacon grease. Sauteed onions , then add all other ingrediants. Make sure all the beans are covered then add to crockpot or oven. ( mine is in a crock pot on high) cook until beans are tender or warm.
