How do you know when sour cream goes beyond sour?

Probably when there is a green mold growing on it. No sour cream for the quesadillas this evening.

Years ago I worked in restaurant and they'd order the huge 5 gallon buckets of sour cream. The servers had to make up the little sour cream cups and we were told to just remove the green mold and continue scooping.

I don't think I'll ever order sour cream on my baked potato again. :eyebrow:

It's like Yogurt (real Yogurt anyways).

It's a soured milk product which means it's already spoiled, it can't get anymore spoileder. It MAY taste a little more sour, but it won't go bad.

Took my kids on a tour of the Stoneyfield Yogurt plant, and we were told the same thing.

"Scrape off the mold and eat up."

You don't even have to keep it refrigrated, though the cold will stop most of the mold growth.
