easy side dishes for Christmas Eve. Thanksgiving I made the whole stuffing, green bean casserolle and all of that jazz. I am looking for easy but unique recipe's to go with Fried Turkey.

Any ideas?

Cranberry Casserole

1 - 12oz bag raw cranberries
4 to 6 cups peeled, diced apples
1 1/2 cups sugar (yes a whole cup and a half!)

I usually slice up half of the cranberries but it's not necessary. Combine apples and cranberries in greased rectangular baking dish (Glass works best). Sprinkle sugar over fruit.

Granola Topping*
1 stick butter
1 cup oatmeal
1/2 cup brown sugar
1/2 cup flour
dash of salt
pecans or walnuts (chopped) (optional)

Combine all ingredients and spread over top of fruit.

Bake at 350 degrees for at least 1 hour.

*note: we prefer a substantial granola topping so I usually double the batch.

ENJOY!

That sounds really good! I wonder if I could use splenda instead of sugar? I can't have sugar.

One of my favorite potato side dishes is super easy. You rinse off your potatoes, then cut them up into chunks (bite-size or a little larger). Then toss them in a bowl with some olive oil, salt, pepper and minced garlic (I use the stuff from the jar if I don't have fresh on hand). Spread them out on a baking sheet and put in the oven at 375, or whatever the temp is you are already baking at, until they are tender through (usually about 20 mins). Yummy and super easy with no peeling required.

Steamed artichokes with dip (mayo, parmesan chee, lemon juice, pepper).

Not really a side dish but an appetizer I made these at Thanksgiving and they were all gone in minutes they were really yummy :drool:

2 fresh aspargus bunches (rinsed and ends removed)
slices of procuitto ham and roast beef (I used boars head for both of those meats)

1 cup sour cream
1/2 cup mayonaise
1 T grey poupon dijon mustard
horseradish to taste (I used about 2-3 T full I like it spicy!)
1 garlic clove chopped
salt & pepper to taste
squeeze of fresh lemon juice

toss the aspargus into boiling water for 1 minute (just long enough to set the green color no longer you dont want them to get mushy you want them to be nice and crisp) Then place in a ice bath til chilled. Pat dry and roll w/ roast beef or procuitto and serve w/ dipping sauce and enjoy!

Instead of spreading 'em out, wrap in foil with sliced peppers and onions. Same time and temp in oven.

Another appetizer

On a round pizza pan, spread cream cheese 1/8" thick all over the pan.
Spread your favorite salsa over the cream cheese like you would pizza sauce.
Spread cooked, crumbled italian sausage over the salsa.
Sprinkle shredded mozzerella over everything like you would on a pizza.
Bake at 350 until cheese melts.

Set on table next to bowls of Tostitos & Fritos scoops.

(be sure you scoop some first cuz it aint gonna last long) Actually, make a couple.
 
Top
