Liquid Sunshine

BadGirl

I am so very blessed
I just opened up a jar of tomato sauce and a jar of crushed tomatoes that I canned over the summer from fresh tomatoes that I grew. Yep, Vrai, these are the ones that I grew, not the ones from the Amish market.

It was like opening up some Liquid Sunshine.

I am making some of my delicious beef-vegetable soup and plan on making some special cornbread (made with farmer's market corn that I put up in the freezer).

There will be some good eatin' around here during the snow storm.

What are ya'll making to weather the snow and cold weather?

Doesn't that just make you oh so happy? I remember last winter when I found a bag of your homemade tomato sauce in the freezer and I was like, ahhhhhhhhhhh! Every drop was like love.

Tonight, I cooked a Perdue Oven Stuffer Roaster and will make a Chicken/Broccoli Divan tomorrow. I plan on making a large casserole so the Things will have leftovers on Friday when FH and I go out for Valentine's Day.

Then, I will use the remaining leftover chicken for Quesadillas on Saturday or Sunday. I guess I should also make some stock up and save it for soup OR make the soup and freeze it, if I feel like it. :yum:

Do you like spinach? We make chicken, spinach, and mushroom quesadillas with leftover chicken (found in our Williams Sonoma weeknight cookbook)

You just fry up the mushrooms, spinach, and add the chicken. Then add Monterey Jack cheese to make the quesadilla. Serve with salsa and of course sour cream

I have no clue what we are making. I have been sick and nothing sounds good. I don't even want the homemade chicken soup that's sitting in the fridge. Maybe something in this thread will give me some inspiration

Awesome!!!!

Not to be one upping but, just because I know everyone will appreciate it, I just made 'sghetti, threw in a quart of tomatoes we put up last summer from the garden but, what really smelled like summer was one of the bag of peppers we put up, out from the freezer. Oranges and reds (full disclosure, we were given the orange ones and are desperately trying to find out what they are, sweet, awesome cooking pepper).

Not all home made. I use Prego but, the tomatoes, peppers, are ours, fresh shrooms, garlic and onions from the store.

Best batch I've made, maybe....ever.
