Low Carb Diet

My husband and I have been on a low Carb diet for a few weeks now. He's lost 21 lbs, I've lost 14 lbs. So far we've had pretty good results. The only negative is we love to cook and we’re getting a bit bored with our options. So If your on a low Carb diet too, please let us know what your favorite meals or snacks are and we’ll share ours aswell.

Favorite Snacks
Pumpkin seeds
Chucks of cheese, pepperoni and mustard
Chicken salad with celery

Favorite desert
Sugar free Jell-O with strawberries and whip cream
Low carb slimfast shake (2 net carbs)
Stick of suger free gum
Berries with fiber one yogart and almond slivers

Favorite dinner
Chili without the beans (add extra tomatoes and cooked sliced Italian sausage)
Taco salads (without the chips)
Turkey burgers with all the fixings, minus the bun.
Steak with a cooked green veggie

Favorite appetizer
Green Peppers with cream cheese topped with bacon
Green Veggies (broccoli, celery, cucumber, green peppers) with spinach dip
Cooked shrimp with old bay and butter

do you have a pinterest? I have found so many great ideas on there..including oopsie rolls..an egg based nearly carb free roll..they are amazing..and allow you to have rolls for sandwiches, grilled cheese, etc. just google oopsie rolls and you should find the recipe..the things are amazing! you could also make them real small and add chocolate whipped cream (in the can, really low carb) to make low carb cream puffs. I also use them to make awesome breakfast sandwiches with sausage, egg, and cheese. I am also obsessed with buffalo wings for dinner..and since I am at a point where I can have a little extra carbs I get special k cracker chips..(27 for like, 16 carbs or so , I think) and eat those with buffalo chicken dip. Also, toufouyan brand (I dont use the others they suck) low carb wraps actually taste pretty good (7 net carbs) and I use those to make chicken enchiladas, wraps, and quesadillas. As for snacks, I really like almonds. Emerald has 100 cal packs with 2grams net carbs in a cocao flavor, they are really good, kind of like an approximation of a hersheys bar with almonds. I also like hummus with zucchini strips and cucimber slices with ranch..as well as, of course, cheese sticks, sugar free jello and pudding, mini sausage links with flavored mustards..things like that.

How do you make yours - do you bake them in the oven first? I got some at Safeway one time for lunch & just ate those. They are so good! They didn't have any breading & the didn't seem fried. I would rather make my own so I know there isn't a lot of sodium in them.

I alternate "cheater" frozen wings with ones I make myself. The cheaters are good to microwave when I am hungry and out of time and tempted to eat something I shouldn't..otherwise I grill them and coat with hooters or franks buffalo sauce. I'm on a wing kick now.
