It's called Pumpkin Lust Cake -
Pumpkin Lust Cake

There are MANY variations of this recipe! I've made it for over 20 years with butterscotch pudding -and it's called "Butterscotch Fantastic". It was a receipt from a friend of my mother's and everytime I've made that and taken it someplace, nearly everyone loves it.

You can substitute any pudding in this. There are tons of hints & suggestions in the comments section, as well, if you can't find the pumpkin spice pudding.

The bottom layer is really a "shortbread cookie" type crust - and it's very simple. 4 ingredients: 1 stick butter, 1 cup flour, 1 cut chopped nuts, 2 tbsp. sugar.

My husband make what he calls "lemon fluff" same type of crust. Really tasty. I have to try the Pumpkin Lust, that looks so good.

I'm going to make it for Thanksgiving dessert. My son is coming down and I always make something different for dessert.

Just to let you know - I couldn't find it at PF Food Lion. I did find it at the PF Walmart - but I only found TWO boxes, and that's what I needed. How lucky was that?! So, I know they carry it.

The pumpkins spice pudding is seasonal, so I will have to stock up for this time of year. It's also surprisingly good! (Nutmeg sprinkled on the top layer is, too!)
