I made this salad yesterday for our Mothers Day BBQ and it was so good :yum:

7 layered Mexican salad w/ spicy Cilantro vinagrette

2 packages (pre chopped) romaine lettuce
3 tomatoes, chopped
1 can black beans, rinsed and drained
1 small purple onion, chopped
2 avacados diced
10 slices of bacon cooked crisp and crumbled
3 ears of corn cooked and corn removed
1 small can sliced ripe olives, drained
1 1/2 cup shredded pepper jack cheese

Layer ingrediants in order listed, when ready to serve drizzle vinagrette over top and toss.

1/4 cup fresh lime juice
1/4 cup fresh lemon juice
1/2 cup olive oil
1 small jalapeno seeds removed and diced
1 cup of fresh cilantro
2 cloves garlic
1 tsp salt
1/2 tsp pepper

process all ingrediants (except oil)in food processor, slowly drizzle in oil until dressing comes together

Mmmmmmm.....mojitos :drool:

The first time I had one (or several) was at a Cuban restaurant in Charleston. I was eating some kind of spicy shredded pork with black beans on the side. They were refreshing and really helped tone down the spicyness of the food. Either that or I was just numb.
