Does anyone use and like silicone for baking? Other than making egg muffins, I rarely bake. And the extra large (maybe teflon?) muffin tin I have really sucks and proved it again with the pumpkin muffins.
We recently pureed pumpkins and I made a double batch from a 50 year old recipe a friend that used to own a bakery shared with me. I used every tin, loaf pan and anything I could find to bake them. They turned out great and some are in the freezer (as well as more pureed pumpkin)
But...I really like the size of a large muffin (for both the egg muffins and now pumpkin) The large muffin tin needs to go in the trash and I am looking for a suitable replacement.
Pros and cons on silicone bake ware?
TIA
